
Ingredients
1 Pork Loin
2 Tablespoons Butter
1 Small Onion
2 Tablespoons Pesto OR 2 Tablespoons Italian Dressing
2 Tablespoons Minced Garlic OR 1 Teaspoon Garlic Powder
1 Bag of prepackaged Spinach
1/2 Teaspoon Red Pepper Flakes
1 12 ounce can of Artichoke Hearts drained well
Feta Cheese Crumbles
Mozzarella Cheese
1 Tablespoon of Olive Oil
Preparation
In a skillet:
- melt 2 T of butter
- brown finely chopped onion till soft
-turn down heat
-add 2 T pesto, 2T garlic
-can of artichoke hearts drained well
-1/2 T red pepper flakes
-and raw spinach
-Cook covered till spinach wilts.
-cook open till all the water is absorbed stirring often
-add light salt- pepper to taste
Let cool
Pork loin directions:
-Take you pork loin and cut it to where it is one thin layer but still all attached. It is not easy!

- lightly salt and pepper the inside
-add very little oil and smooth around
-spread out mixture
- put a layer of feta crumbles
-and a thin layer of mozzarella cheese
-roll it up place in pan with fat side up
-Broil top till browned
-Bake in oven 350 till temp in center with thermo in 140 degrees F
-Should be about 2 hour (ish).
-Take out of oven and cover so that it may rest 10 minutes
